Where are you from? And how did you end up here?
I’m from a tiny, tiny town in southeast Texas.  I came to Chicago via Virginia (school) and West Virginia.

How long have you been with Protein Bar?
July 12, 2011 was my orientation day.

Biggest Passions?
I’m passionate about the arts. Music, dance, theatre, food. Food is an art, right?

A goal you have achieved that you are proud of?

Healthy Holiday Swaps: Thanksgiving Day >

 

The typical holiday weekend goes something like this:

Stress out about family togetherness
Stress out about menu, meals, and prep
Watch a lot of TV
Shovel food sometime between 12 and 5
Fall in and out of sleep while watching more TV
Shovel more food at 9
Pass out
Repeat (or maybe add a little shopping in on Friday which is usually capped off with unhealthy food options and fattening holiday “coffee”)

In the spirit of the season we’re unveiling yet another amazingly healthy menu item. A few weeks ago Protein Bar Washington/Wells introduced Spiced Butternut Squash soup, which has quickly become one of our most popular lunch items! Today, it’s River North‘s turn to turn up the heat with a new, seasonal soup. Meet our Roasted Veggie Lentil soup, Chef Phil’s newest (and absolutely delicious) creation.

SWEAT Story: Quality vs. Quantity >

World Diabetes Day: Diabetes and Food >

Years ago it wasn’t possible to live as a healthy diabetic and have a delicious relationship with food. Many of the typical treatments involved severely restricted diets—some that bordered on starvation. With medical advancements and much “healthier” view of nutrition—we can eat really well without all the restrictions and starvation. And if everyone ate the way a diabetic should should—our country would be enjoying a much higher level of community
