Makes 6 cutlets
1 (15-ounce) can cannellini beans, drained and rinsed
1/3 cup breadcrumbs
1/4 tsp onion powder
1 tsp garlic powder
2 Tbsp nutritional yeast (optional)
2 tsp olive oil
1 Tbsp soy sauce
1/2 cup vital wheat gluten
1/3 cup vegetable broth

Brined Grilled Chicken
8 Cups Water
1 Cup Tamari
1/2 Cup Coconut Aminos
3 T Kosher Salt
1/2 Cup Brown Sugar
4 Garlic Cloves, minced
4 Bay Leaves, crushed
1 T Whole Black Peppercorns, crushed or coarsely ground

BUFFALO BURGER with Crispy Kale Chips
Can you handle this buffalo on buffalo delight? Pair better-for-you bison meat with tangy buffalo sauce and crispy kale.
“What so Proudly we Kale” Chips
5 oz Kale, de-ribbed and chopped into roughly 2″x2″ pieces
2 Tbsp Brown Rice Miso
2 Tbsp Tahini Paste
2 Tbsp Fresh Lemon Juice
1 Tbsp Water
1 Tbsp Olive Oil
1 tsp Sea Salt
1 tsp Garlic Powder
1/2 tsp Red Pepper Flakes
Blend in blender or food processor until smooth. Rub mix all over the surface of the kale.
