Our Ingredients

HEY, IT’S ALL GOOD

When choosing ingredients, most restaurants favor cost and ease over nutrition. We don’t. Simply put—if it’s not healthy and great tasting, we won’t serve it. Every single ingredient in our recipes has a purpose.  Further, we feel that nutritionally relevant ingredients are what set us apart. Call it a philosophy, credo, or mission—it’s just what we do.


Super 6 Salad Mix

Whatever you do, don’t call it Mesclun. Our Super 6 Salad Mix is a blend of 6 healthy veggies aimed at packing plenty of nutrition into every bite: romaine, spinach, purple cabbage, broccoli, carrots, and kale. Crisp Romaine brings vitamins A, C, B1, and B2, as well as fiber, potassium, and iron. Spinach could fill a dictionary with its health appeal: niacin, zinc, fiber, protein, vitamin A, vitamin C, vitamin E , vitamin K, thiamin, riboflavin, vitamin B6, Calcium, Iron, Magnesium, Phosphorus and Potassium. Purple cabbage is a great source of vitamins, as well as polyphenols and anthocyanins, which are linked to lowering the risk of cancer and heart disease. Broccoli’s cancer-fighting sulforaphane alone makes it worthy of a place in our mix. Carrots throw in beta-carotene for some added vitamins and antioxidant power.


Quinoa (keen-WAH)

This grain-like seed is the highest non-meat protein on the planet and comes directly from South America, where it has been considered the ‘perfect food’ by Incans for thousands of years. Quinoa is a great replacement for rice or pasta and we only use organic quinoa straight from South America. 


Signature Salad Dressings

Our dressings are batch-made at each location using fresh produce and high-quality ingredients. All dressings are vegan-friendly and gluten-free. 

  • Balsamic Flax Vinaigrette: A classic with a twist. In addition to balasamic vinegar, canola oil, and dijon mustard, we add cold-pressed flaxseed oil to add healthy Omega-3's
  • Cilantro Lime Vinaigrette: Our Guac and Roll wouldn't be the same without it. Bright cilantro, pure lime juice, jalapeños, agave nectar, and garlic powder make this the perfect finisher for guac. 
  • Agave-Que: We are particularly proud of this one. We wanted a killer-tasting barbeque sauce that leaned towards healthy. We take dark molasses, agave nectar, balsamic vingear, and chipotle powder and whirl them together with healthy oils and seasonings for a dressing that rocks our Urban AgaveQue.

Whole Wheat Wraps

The wraps we use are a low-calorie, low-sugar, high-fiber whole-wheat wrap. Each wrap alone packs an amazing 13g of dietary fiber and 8g of protein. And, unlike most wraps, we don’t sweeten them with honey so it stays vegan.


Agave Nectar (uh-GAH-vay)

The agave nectar we use is strictly organic and straight from Southern Mexico, where it is harvested from the agave plant. This amazing product won’t spike your blood sugar like other sweeteners, due to its low glycemic index. 


All-natural Chicken

A protein essential — our chicken is all-natural, domestically sourced, and antibiotic free. 

Organic Beef

We use top sirloin organic beef from Illinois farm, Sommers Organic. The cows are grass-fed and raised without the use of hormones or anti-biotics.


Produce

Whenever possible, we use local and organic produce. Because of the seasonality of produce, we will often rotate our menu items to feature only the freshest, in-season produce.


Milks

Our almond, soy, and dairy milks are all-natural and delivered fresh to us at least two times per week. We use no added sugars, and our dairy milks are hormone-free.


Vegan cheese

We use Daiya vegan cheese. This amazing high-protein product is made from entirely plant-based proteins so it stays dairy, soy, nut, and gluten-free. It’s got a great cheddar taste and melts well. Ask for it instead of dairy cheese in our recipes. 


Flax Seed

Its high content of Omega-3s has made flax seed a modern miracle food, linking heart-healthy flax seed to lowered cholesterol and blood pressure. Flax seed comes in whole seed form, ground, or as oil and provides a slightly nutty flavor.


Acai (ah-sigh-EE)

With nearly twice the antioxidant power of any other fruit, Acai berry is one of the most nutritious and powerful foods in the world. Acai provides a healthy combination of protein, fiber, and Omega-3s, and has a subtle chocolate after-taste. A single acai berry can have up to 30 times the anthocyanins of red wine grapes.


Greek yogurt

Magnificently thick and tangy, Greek yogurt is simply regular yogurt that has been strained to remove liquid. This unique process leaves Greek yogurt with more than 3x the protein of regular yogurts, all while remaining filled with live & active cultures and fat free.


Kombucha

Known in China since 221 BC as “The Tea of Immortality,” Kombucha is a living probiotic elixir made by fermenting tea and sugar with live & active cultures. The result tastes somewhere between sparkling cider and champagne. Kombucha helps the body restore balance and vitality, linking it to numerous health benefits.


Steel-cut oats

Our organic steel-cut oats are whole grain groats (the inner portion of the oat kernel), which have been cut into two or three pieces using steel discs. Golden in color and resembling mini rice particles, they are as nature intended—nothing added and nothing taken out. Steel-cut oats are different from the oats you’re probably used to that have been steamed, rolled, and toasted. Due to all of this additional processing, traditional oats have lost some of their natural taste, goodness, texture, and protein. Steel-cut oats also have a lower glycemic index, therefore raising your blood sugar much slower—which is great at stopping those mid-day energy slumps. 


All-natural peanut butter

We use Maranatha brand all-natural peanut butter. Why? All-natural peanut butter does not contain trans-fat laden hydrogenated oils found in most grocery store brands. Further, it's minimally processed, preserving most of the beneficial nutrients found in the skin of the peanut. 

I emailed Matt (owner) today asking about the origin and sourcing of your chicken, not expecting a speedy or insightful response. I am not a vegetarian but care about where my food comes from. What do I get? Not only a detailed response, but also the link and source of the poultry. I freakin' LOVE Protein Bar!! You guys are awesome!
